Salad of Salads

Ingredients

Any combination of vegetables:

  • 2 cups mung spourts (200g)
  • 1 cup grated or sliced carrots (100g)
  • 6 large pitted green olives cut
  • 1 cup Four bean salad (fresh or canned)
  • 1 or 2 cups coarsely grated jicama (if you can't get jicama you can use canned water chestnut pieces for crunchiness)
  • ½ cup capsicum (any color)
  • ½ cup frozen or fresh corn
  • ½ cup chopped tomates
  • most other vegetables are not suitable for this salad

Nuts/Dry Fruits Any Available (Seasonal):

  • apple slices or grated
  • grapes
  • craisins (Dried Cranberries)
  • walnuts
  • pine nuts
  • blueberries
  • pitted dates (cut into small pieces)
  • almond flakes
  • pumpkin seeds
  • pecans
  • If you're using apple, add them at the last minute or soak them in lemon juice so they don't turn black.

Spices:

  • 30 ml lemon juice
  • 3 tbsp chaat masala or fruit chat masala(to taste)
  • 2 or 3 tbsp  date/tamarind chutney (available at an Indian store or make fresh) (optional)
  • 1 inch mango ginger (white yellow) cut to small pieces (chopped)
  • any pickle masala
  • Pickled jalapenos (jalapenos) (these are not very hot and are thick)
  • Salt to taste – less salt is needed than normal

Garnishing:

  • Sliced ​​almonds, grapes, pomegranate seeds, walnuts, chopped olives

Instructions

  • Take a large mixing bowl, put the mung sprouts, grated carrots and mix. Then add the other vegetables; 4 bean salad, olives, tomatoes, grated or chopped jicama and mix. Then add the nuts and fruits. Finally add the fruit chat mix (Available in Indian stores, red chili or any pickle powder, lime juice, date/tamarind chutney (optional) and mix.
    Transfer to a serving bowl and garnish with almond slivers, pecans/walnuts, olives, pomegranate seeds

Notes

When Time Matters
Buy mung sprouts from the Indian store, buy all chopped vegetables from grocery stores – can get grated carrots, chopped tomatoes, capsicum and cut fruits. Can use frozen corn, and red chili powder.
Indian stores: Buy mung sprouts (these still have the green mung bean at the bottom unlike the completely sprouted ones in grocery stores)  Dates/tamarind chutney and fruit chat powder
Grocery store: A can of 4 bean salad, chopped mixed fruits, grated carrots, chopped peppers (capsicum all colors),chopped tomato and frozen corn, lime juice, mixed chopped nuts.

With what to serve:
This salad is wholesome and very filling. This can be a lunch or dinner item by itself.  I have also served this pre-dinner as an appetizer.  This is one of my most popular recipes!
