Riced Cauliflower Recipes

4 cups of Cauliflower Rice = 80 calories (Any type of rice would be 900 calories)

Ingredients

  • Cup of yogurt = 140 calories
  • 2 tablespoons of canola oil = 248 calories
  • Beans/carrots = 40 calories
  • Sambar = 40 calories
  • Entire meal for two = 548 calories
  • With Rice = 1368 calories

Instructions

  • Microwave Plain Cauliflower rice: Microwave: 4-6 minutes in microwave. If frozen follow directions on the package. If fresh grated cook closed with sprinkle of water for 3-5 minutes on high. Frozen cauliflower is better if you can thaw it by placing from freezer to refrigerator. That way water will not form. When cooking from freezer to microwave water will form. You can put it on paper towel or squeeze out water. Use this wherever you use rice.
  • On the stove top. Can cook fresh grated or frozen cauliflower. In a pan, put a tablespoon of oil and jeera. Put the cauliflower , salt to taste and Cook covered for 3-4 minutes. It should not be overlooked. If frozen package is being used, donot cover; cook until all the water evaporates. Usually takes about 5-7 minutes. You can add vegetables like peas, carrots to make it more colorful and nutritious. Eat like you would eat fried rice.
  • Making Cauliflower lemon rice: In a pan put 1 tsp of oil, when hot add red chili, mustard seeds, chana dal, urad dal, green chilies, ginger and curry leaves one after another. Here I am adding MTR lemon rice powder, saute for a minute or two and then adding the cooked cauliflower rice. Otherwise you can add lemon juice. I also added cilantro towards the end.
  • Making Caulifower Dahi Rice (yogurt rice): 1 cup Refer to earlier recipe video
  • 1 cup cauliflower rice cooked in microwave or stove top.
  • Seasoning: In a pan put 1 tsp of oil, when hot add 1 red chili, half teaspoon mustard seeds, 1 teaspoon chana dal, ½ teaspoon urad dal, 4-5 black whole peppercorns, jeera ¼ teaspoon, green chilies(Optional) , ginger 1 cm cut and curry leaves 4-5 one after another. Mix the cauliflower rice with seasoning and Cilantro (1 tablespoon, cut). When this is cooled, add half cup of dahi and salt to taste.
  • Mixing Saambar Cauliflower rice: I just added prepared Saambar to the cooked cauliflower rice
  • Mixing auliflower with carrot/beans curry: I just added already prepared carrot/beans curry.
