Mukkala Pulusu

The Love of the Telugu People

Ingredients

  • Egg plant
  • Mullangi mooli, long white radish
  • Carrots
  • Sweet potato
  • Okra – Bhindi
  • Beans
  • Capsicum
  • Dondakaaya
  • Pumpkin gummadi kaaya
  • Jaggery – powder 3 tsp or 1 large piece
  • Cilantro chopped – 1 catori
  • Rice flour – 3 tsp
  • Green chilies
  • Haldi
  • Salt to taste
  • Can also add cauliflower, chayote squash

Seasoning:

  • Red chili - 2
  • Mustard seeds – 1 tsp
  • Jeera – 1 tsp
  • Hing – 1/2 tsp
  • Chanadal – t tsp
  • Urad dal – 1 tsp
  • Mentulu - 8-10
  • Sambar powder – 5 tablespoons for potful of pulusu
  • Tamarind - soak fistful or use tamarind concentrate – 4 tablespoons

Instructions

Method one: Instapot

  • Put all the vegetables, haldi, salt to taste, cut greenchilies  in instapot and pressure cook for 10 minutes

Method two: Microwave (When time matters)

  • Put all vegetables, green chilies, haldi, salt and half of tamarind juice and put in microwave to boil on high for 8 minutes.

Cooking Instructions

  • In a pot put oil, red chilies, mustard seeds. When the seeds splutter, put chanadal and urad dal. Next put Methi seeds 8-10 and fry until you smell Methi aroma. Next add hing and curry leaves and fry. Now add the second half of the tamarind juice and boil briefly for 2-3 minutes. Now add the boiled vegetables. Add 5 tablespoons of Sambar powder to this.
  • Prepare the rice flour slurry by mixing 3 tablespoons of rice flour in room temperature water and mix thoroughly.
  • Add this very slowly constantly stirring to the pulusu to thicken it.
  • Garnish with coriander.

  • Usually served with appadam/papad and white rice and plain dal and ghee!
