Lean & Green: The Mung-Mooli Marvel

Ingredients

  • Main Ingredients:
  • Mooli White Radish: 2 large, grated = 970g
  • Moong Dal: ¾ cup
  • Green Chilies: 2 chopped
  • Ginger: 1 inch piece chopped
  • Salt: to taste
  • Lemon Juice: 1 oz 30ml or to taste
  • For Seasoning Tempering:
  • Oil: 1 tsp
  • Red Chilies: 2 whole
  • Mustard Seeds: 1 tsp
  • Chana Dal: 1 tsp
  • Urad Dal: ½ tsp
  • Turmeric Powder Haldi: ½ tsp
  • Cumin Seeds Jeera: ½ tsp
  • Curry Leaves: 7-9 leaves
  • Fresh Cilantro: 4 tablespoons chopped

Instructions

  • Soak the moong dal for half hour.
  • Wash peel and grate the mooli (White radish).
  • Heat 1 tsp oil and put the red chillies, mustartd seeds. When the seeds splutter, add chana dal and urad dal. Then add chopped greenchillies and ginger. Add curry leaves and turmeric powder.
  • Now add the grated Mooli, mix thoroughly then cover. Let it cook for 5-7 minutes on medium low heat.
  • Now add the soaked moong dal. Cook for another5 minutes covered. Add lemon juice and mix.
  • Turn off the stove and add lemon juice and mix,
  • Add chopped cilantro for garnishing.
  • Goes well with Chapati, poori, and rice too.
  • If you are trying to lose weight, you can eat it with cauliflower rice or as it is; it is filling, has protein and vitamins, yet very low in calories.
