Easy Veg Quesadillas with Naan: Cooking with my Mexican friend

Ingredients

  • Firestone Naans
  • Stuffing:
  • Mozzarella cheese – 1 cup
  • Red Bell Pepper – 1 cup
  • Yellow Bell Pepper – 1 cup
  • Orange Bell Pepper – 1 cup
  • Green Chilies – 2 to 3
  • Olives - 1 cup

Instructions

  • Start by slitting the store-bought or frozen naan in half.
  • In a bowl, mix together the following ingredients:
    - 1 cup of Mozzarella cheese
    - 1 cup of diced red bell pepper
    - 1 cup of diced yellow bell pepper
    - 1 cup of diced orange bell pepper
    - 2-3 diced green chilies
    - 2-3 diced green chilies
  • Stuff the mixture between the two halves of the naan.
  • Heat a skillet or griddle over medium heat.
  • Place the stuffed naan on the skillet or griddle with the thick side of the slit naan facing down.
  • Cook until the cheese is melted and the naan is crispy and slightly browned on one side.
  • Carefully flip the quesadilla to cook the other side until it is also slightly browned and crispy.
  • Once both sides are cooked to your liking, remove from the heat.
  • Cut the quesadilla into wedges and serve hot.
