Dahi Rice

Ingredients

  • 2 cups cooked rice
  • cup Yogurt/Dahi
  • 5 tbsp chopped cilantro

Seasoning

  • 2-3 red chillies
  • 1 tsp mustard seeds
  • 1 tbsp chana dal
  • ¾ tbsp urad dal
  • 1 tsp cumin
  • 5-7 curry leaves
  • 2 green chillies (chopped)
  • ½ tsp peppercorn
  • garnish with seasoning, pomegranate seeds and grapes

Instructions

Seasoning

  • Heat oil and put red chilies then mustard seeds. When the mustard seeds start spluttering, put chana dal then urad dal. When they are light brown, add chopped green chilies, jeera, peppercorn and curry leaves. 
    Take a portion of this with the red chilies aside.
    Add the rest to the cooked rice with salt added to taste. 
    Add chopped cilantro and mix.

Garnish

  • When serving you can put the saved seasoning on top and garnish with 
    pomegranate seeds, chopped coriander and grapes.

Notes

When Calories Matter
Cook with Cauliflower rice and low fat yogurt 
White rice with nonfat plain yogurt
When Only plant-based food matters (Vegan)
Use vegan yogurt
With what to serve:
Tastes great with lemon pickle, tomato cilantro chutney, ginger chutney, stuffed fried chilies
Eat this for lunch or dinner or with pulihora for a lazy Sunday afternoon brunch followed by a nice nap!
Tips:
This is a typical comfort food for many South Indians and had the added benefit of being a probiotic. The population of your guts will thank you! 
All it takes is seasoning and salt to transform plain white rice into a delicious dish enjoyed by generations of people from peninsular India.
If you prepare a few hours ahead of time,  add a half-cup of warm milk and mix so that it will set by the time you serve and does not turn sour.
